Happy Thursday - Recipe

Hope you are having a great week. Pretty good here, nothing to exciting, which seems to be the story with me....Made this soup on Tuesday and its yummy and really easy! (Sorry I didn't take a picture and I can't find one online)


Lemongrass Coconut Chicken Soup
From: Simply Ming by Ming Tsai and Arthur Boehm

1 Tbsp grapeseed or canola Oil
4 lemongrass stalks, pale parts only, crushed with the flat side of a knife (I found mine at WholeFoods)
2 medium onions, Sliced 1/8 inch thick
2 Thai or serrano chiles, stemmed but not seeded, minced (I seeded a little, depends on how hot you want it)
2 boneless chicken breasts, cut into 1/4 inch strips
3 Tbsp fish sauce (nam pla)
6 cups chicken broth
1/2 cup coconut milk (I actually used a whole can)
Juice of 2 lemons
Kosher salt and ground pepper to taste
1 Tbsp thinly sliced scallion greens

Heat a medium saucepan over medium-high heat. Add the oil and swirl to coat the pan. Add the lemongrass, stir, and sweat it, uncovered, for 2 minutes. Add the onions and chiles, if using, and saute, stirring, for 1 minute. Add the chicken and saute until opaque, about 1 minute. Add the fish sauce and broth, stir, bring to a simmer, and cook until the liquid is reduced slightly to intensify the flavor, 15 to 20 minutes. Whisk in the coconut milk and lemon juice. Season with salt and pepper, garnish with the scallions, and serve.

This soup is "souper" yummy!!! ENJOY!

Boring

Not much exciting to update you on, or at least anything out of the ordinary...I could tell you about:

Winning the last ALTA mixed doubles match....It was great...I am the youngest team member and played with the oldest team member...

Winning our first T2 match of the season, and at the new level...its just 2.5 for those of you who are in the know about tennis....

Spending the week relaxing with my husband...his business partner was out of town, so we slept in, ate breakfast together, skipped workouts...its was actually really nice and a wonderful treat

Sharing a birthday dinner with a wonderful friend (her birthday) and a casual dinner out turning into a weeknight party and a slightly un-fun next morning

Friends backing out of a weekend Girls trip at the last minute...yea, I won't share my feelings on that as I have gotten "over it", we're looking forward to rescheduling

Spending an afternoon at the outlets with the out of town friend that actually made it to Atlanta

Dinner at Bluepointe with out of town friend and mutual ATL friend..fun times!!

2 hour nap on Sunday...

See, nothing overly exciting to share....maybe I'll think of something witty to share or something exciting might actually happen!!

Ice Cream

I have a soft spot for ice cream. I love it, even though I have to be careful eating it (especially the full fat kind)....

I was shopping yesterday and saw this on sale at Kroger....

Um, I might be about to go get my third little dish of the day (they are small ramekin size)...No wonder I've been feeling bloated and fat.....It is slow churned though so 1/2 the fat...that counts right?!?!?!

Walmart

(so, I may get some backlash on this post, but I am doing it anyway)

I am so OVER Walmart Supercenters...I refuse to buy food from there again. This past weekend we ran in for just a couple things (we needed non food items too). We picked up some salad, milk and other things (I mention the salad and milk because that is where the issue comes in). We got home to get ready for dinner. I noticed the salad didn't smell that great when I opened it...well that's because the center of the container was bad ALREADY. Yep, that's right the DAY I bought it...I picked out what I could use (because it was too close to dinner time) and then threw the rest away ... bye bye $4.
Then James went to drink some milk (He is obsessed and loves to drink it with his meals...we're hoping to pass this trait to our future little ones)....well, he opened the milk and couldn't even get it past his nose...yep, you guessed it...SPOILED MILK....ON THE DAY WE BOUGHT IT... The date on the milk was July 29 (we buy organic)...I did take this back to Walmart for a refund. But, this was the SECOND time the milk as been bad....they must not monitor temperature when shipping it....
Moral of this story....while trying to save money at Walmart, I probably ended up spending more because this were at the end of their shelf lives or were not transported properly and we're good when we got them home...NO MORE WALMART SUPERCENTER FOR ME...(that's not saying I won't go in for non food items)

YUM!!



These beauties are some of my favorite things..and the are in season...which means they are on sale..YUMMY! Just had a bowl for breakfast!!
My love of raspberries is kind of a joke around here....I love them so much, we put a big a bowl of raspberries on our dessert table (at the reception)....well at the end of the night when I realized that I hadn't had any...THEY WERE GONE...except for one sitting on the table...Yes, I ate it...Gross I know, but I really wanted one and I figure the alcohol in my system helped...
Bottom Line...I'm enjoying these berries this week! Thanks Publix for the sale...I might be back to buy more before the end of the sale.
